Because I have insane cooking friends who guilted me into making this for Hanukkah latkes and I AM NOT EVEN JEWISH, whyyyyyy?!?!?
A long time ago I learned that you get a much better result with apples if you use several different varieties. So I made this sauce with 2 quince, and 1 each of large Braeburn, Granny Smith, and Black Twig apples. Also a cinnamon stick, about a half cup of honey, maybe 3/4 cup of water, and a Tablespoon of black peppercorns.
Oh and I just threw all the ingredients into a pressure cooker at the same time for about 30 min. It's gonna all be mush at the end, why bother with two batches of cooking?
