Brown Bag Caramel Corn

  • 3 quarts popped popcorn (3/4 cup unpopped popcorn)
  • 1½ cups salted Spanish peanuts, optional
  • 1 cup packed brown sugar
  • ½ cup butter
  • ¼ cup light corn syrup
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla


  1. Place popped corn and peanuts in a large brown paper bag; set aside.
  2. In a 2 quart microwaveable dish, combine brown sugar, butter, corn syrup, and salt. Microwave on high for 3-4 minutes, stirring after each minute until mixture comes to a boil and then microwave 2 more minutes. Remove from microwave and stir in baking soda and vanilla. Pour syrup mixture over popcorn in the bag. Close bag by rolling opening over 2-3 times; shake well. Microwave bag for 1½ minutes then shake well again to incorporate caramel. Pour caramel popcorn into a bowl and serve. Makes 3 quarts.
