Brown Bag Caramel Corn

- 3 quarts popped popcorn (3/4 cup unpopped popcorn)
- 1½ cups salted Spanish peanuts, optional
- 1 cup packed brown sugar
- ½ cup butter
- ¼ cup light corn syrup
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 teaspoon vanilla
- Place popped corn and peanuts in a large brown paper bag; set aside.
- In a 2 quart microwaveable dish, combine brown sugar, butter, corn syrup, and salt. Microwave on high for 3-4 minutes, stirring after each minute until mixture comes to a boil and then microwave 2 more minutes. Remove from microwave and stir in baking soda and vanilla. Pour syrup mixture over popcorn in the bag. Close bag by rolling opening over 2-3 times; shake well. Microwave bag for 1½ minutes then shake well again to incorporate caramel. Pour caramel popcorn into a bowl and serve. Makes 3 quarts.
