French Fries Aren’t The Best Kind of Fries. These Are - Chickpea Fries.

Rosemary Chickpea Fries Yield: 4 to 6 servings Time: About 1½ hours, largely unattended

Oil for greasing the pan 1 cup chickpea flour 2 cups vegetable or chicken stock ½ teaspoon dried rosemary Salt and black pepper Canola or light olive oil for deep-frying

1. Grease an 8- or 9-inch square pan. Put the chickpea flour, stock, and rosemary in a medium saucepan; season with salt and pepper and whisk to combine. Cook over medium heat, whisking constantly, until the mixture is very thick, 7 to 10 minutes. Spread the chickpea flour mixture as evenly as possible into the greased pan, cover with foil or plastic wrap, and refrigerate until firm, at least 1 hour.

2. Put at least 2 inches of the canola or light olive oil in a large, deep pot over medium-high heat. Cut the chickpea flour cake into ½-by-3-inch strips. Add one of the strips to the oil to test whether it’s hot enough; the oil should immediately bubble vigorously. Working in batches, cook the remaining strips until deep golden brown, 3 to 5 minutes. Transfer the strips to paper towels to drain, season with salt, and serve hot.

Aren't chickpea fries... Falafels?

I think that it's a question of shape and texture. A falafel has coarsely ground chickpeas, where the chickpea fry is smooth. What about using hummus mix reconstituted with less water? In S. India and Sri Lanka we have Vadai which is essentially a falafel.


1 lb split Chick Pea Lentils (kadala parippu)1 onion chopped2-3 green chilles chopped1 red dried chillie choppedAbout 3 cups oil for fryingsalt

Soak the lentils in water for about 4-5 hours. Blend the all the ingredients except the Lentils in a blender or food processor.

Divide the lentils into 3 equal portions. Add one of these portions into the blender with rest of the ingredients and blend to a paste. Remove from blender or food processor put in a bowl.

Next blend another portion of the lentils halfway (partially broken pieces), add to bowl.

Add the last portion of lentils to bowl and mix throughly. Adjust seasoning.

Heat the oil in a fryer.

Take about a tablespoon of the mixture and make into patties. Fry till golden brown.

Serve hot with corriander/mint chutney or alone. (see recipe under Drinks and Snacks)

Chick peas are yummy, I put olive oil and garam masala on them and bake, makes a nice healthy snack food.

That sounds awesome. Any tips for finding great chick peas?

I just buy the canned, but you can also soak the dry beans, I've never done that!  Here's a recipe:

sorry, I am currently back in England, so speaking Englandish. Garbanzos and Garbanzo flour which is pretty easy to get.
