There are practical reasons to have two founders rather than one. I cannot even IMAGINE doing a startup alone!

what about more than two?

It is the subject of much debate. Example:

2 seems most common; more than 4 rarely succeeds.

More than 2 can lead to problems in business, in my experience, 2 will gang up on 1, 3 will gang up on 1, not that it's always that way, but it's primed for discordance. 

I've seen more conflicts with 3 and 4 founders than with 2. 

You're right that 3 can lead to unstable 2-on-1 dynamics.
