It's eggs POACHED in tomato stew or tomato sauce, depending on your preference.  Such a Catholic name for a dish.  :)

What does it mean to poach an egg in tomato sauce?

Crack egg open, then let the heat from the sauce cook the yolk and albumen?

Yes.  Lower heat keeps the eggs tender.

Hmm, that sounds delicious in a huevos rancheros kind of way. 

I will have to try it sometime.
