An umami-laden feast from England. I like peas in my shepherd's pie, but some people prefer them on the side.
I made this recipe twice recently: once with creamed cauliflower topping, and once with creamed cauliflower on one half and creamed potato on the other. In all cases people preferred the cauliflower! I was quite surprised. Just be sure to dry the boiled cauliflower in a warm pan for a few minutes while breaking it up with a fork, it will get rid of the watery effect and make it light and fluffy.
