People who hate fruitcake have been traumatized by overly hard fruit (green maraschino cherries, candied pineapple) and overly soft cake. You're supposed to "feed" this cake a cup of brandy while it cures, you can't do that if the final cake is dry. I cover my black cake with a sheet of marzipan sometimes for special friends, it is beloved in Jamaica and other former British colonies.
