Didn't Einstein say curiosity is MORE important than intelligence?

Exactly.  Lack of curiosity, and other types of apathy, is a terrible affliction.  I don't understand it myself.

Can curiosity be learned?

Yes.  But more commonly, discouraged, diminished, or destroyed.

I'd go farther... curiosity is intelligence made manifest.
