Red-Wine-Braised Turkey Legs Recipe
Joyce Park stashed this in Food
This Thanksgiving I plan to make soup from the legs and wings, red wine braised thighs, and a "turketta" from the breast.
This looks like a Thanksgiving feast! Yum!!
I didn't end up needing the drumsticks for soup -- one wing and half a turkey carcass makes a FULL batch of soup -- so I cooked the recipe as written except honestly after 2 cups of wine and an extra-large carrot there was no room for any broth in my 4 quart casserole. It seemed horribly wasteful to me to throw away the veggies (which were soft but still yummy) just to turn the cooking liquid into gravy for a meat dish... so I ended up taking the meat off the bones (saved them for stock, of course), then cooked two bunches of kale in the wine and veg, then returned the meat to the pot for something more like a stew than a meat dish with gravy. AMAZEBALLS!
That does sound amazing. You are so good at using all the pieces!
