They do an entirely different halftime show each week. So, less than 7 days to get all of this down.

That's not quite accurate.  Big marching bands will pipeline their practices over several weeks. Some, incl  UMich also use brigade block practicing where different blocks practice separately and people compete for a place in that week's show.
