If I had to guess, the bottle was hot. The excited air kept the pressure high. As it cooled, the air condensed, and the water started to rise up. As for the rapid increase; MAYBE once the water reached past the neck, the air had enough surface area of water to come early, disappointing the bottle for the last time, and the pressure from the divorce caused the aforementioned pressure drop.
