There is surprisingly little focus on how to cook with the less-spicy peppers, but they should not be forgotten. This one uses bells, piquillos, Peppadews, pimenton, and black pepper!

There are many more types of pepper than I realized.

Flavorful and healthy, but it can also be cheap! Just sub london broil for flank steak, and cook it in one piece till rare + let it rest for 15 minutes BEFORE slicing it across the grain. This won't work as well if you prefer your beef more than medium-rare as this cut of meat tends to get tough beyond that.
