The first 12 minutes are hard core science. then Jose Andreas comes out to take us through the history of geleation, then he shows some mind blowingly gorgeous videos of molecular gastronomy (or modernist cuisine, if you want to be that way)
Demos start at 38:07, if you want to go straight to the food porn. He reinvents clementines, corn, ravioli in ways I never dreamed.
He finishes up talking about social business, and bring solar ovens to the third world. wow.
I wish I lived near Harvard so I could attend.
