Blueberry Chia Seed Jam Recipe (Gluten-Free) Yield: 1 cup
Total time: 10 minutes
Ingredients: 6 oz fresh blueberries3 tablespoons chia seeds3 tablespoons organic agave syrup or maple syrupDirections: Place the blueberries and syrup in a blender and puree. I used an immersion blender but you can also use a regular blender or food processor. Add the chia seeds and mix with a spoon.
Place contents in an 8 oz jar or container, such as a Mason jar. Cover the blueberry jam and place it in the refrigerator for at least 2-3 hours before serving. This will give time for the mixture to thicken.
Serve over toast, with peanut butter sandwiches, yogurt, ice cream, waffles, pancakes, or as desired. This jam will keep for up to 1-2 weeks in the fridge.
NOTE: If you prefer a smoother texture, you can combine all the ingredients together in a blender and pulse until smooth.
