Allegedly these slow-sauteed chicken thighs come out like they've been fried -- but with only one tablespoon of oil! And all the "work" involved is putting the meat in the pan and turning once.

That's genius!

One tip: you really want to use smallish chicken thighs for this recipe. I used some freakishly big ones and they took FOREVER to cook.
