Perfect Pumpkin Energy Bites [Vegan, Gluten-Free]
- 15 dates, pitted
- 1/2 cup walnuts
- 1/2 cup pecans
- 1/2 cup pumpkin puree
- 2 tablespoons chia seeds or hemp seeds
- 1 tablespoon maple syrup
- 1 teaspoon cinnamon
- 1/2 cup coconut, unsweetened**
Preparation Mix all ingredients except for the coconut in your food processor. Refrigerate the mixture for 1-2 hours.Then, form them into 1-inch balls and roll them in coconut.
