Recipe that uses whey, which I usually throw away after making fresh ricotta.

Joyce, a wheyngel cries every time you do that.  Here is a list of ideas for leftover whey... 

- Save it as a starter for any kind of lactoferment.  We use for homemade ketchup, hot sauce etc.  You can make lactofermented lemonade!  http://food52.com/blog/16889-a-new-use-for-leftover-whey-lemony-and-refreshing  (I can't use up more than a pint or a two at a go, for this purpose, though).

- Use in protein smoothies - it's the natural version of what people pay high dollar for in dry form (although much less concentrated) or just drink it straight up post-workout

- Reduce it on the stove to make "Ski cheese" or gjetoast (spelling?)  Have never done this but I know someone who likes it.
