INGREDIENTS6 tbsp. unsalted butter4 cloves garlic, chopped2 stalks celery, chopped1 small onion, chopped1 green bell pepper, seeded and chopped1 small leek, sliced ¼" thickKosher salt and black pepper, to taste2 medium carrots, sliced ¼" thick1 large parsnip, peeled and chopped1 small celeriac, peeled and chopped4 medium new potatoes, peeled and cut into 1" pieces3 cups fish stock2 cups milk1 cup heavy cream1½ tbsp. Worcestershire sauce2 lb. boneless, skinless cod fillet, cut into 2" pieces⅓ cup dill, chopped, plus more for garnish¼ cup parsley leaves, choppedJuice of 1 lemonCrusty bread, for serving
