Spoonbread was the very richest form of the endless cornbread recipes upon which American cuisine was built.

I finally got to make this recipe and it was as amazing as I expected. Actually less rich than I feared -- sure it has a float of heavy cream on top, but just a small amount of butter in the recipe. I didn't have milk but I subbed yogurt + water + corn kernels I cut off the cob + a little baking soda.

It was delicious! Not too moist, not too dry.

Also you made this note exactly three years after you stashed this recipe. Woah.
