So America is divided between green states and red states?
Even beyond politics, the kale/bacon spectrum correlates well with obesity rates. Yes, people in the bacon-focused states are fatter.
So if we wish to bring the country together, we should start eating more meals that combine both ingredients, such as this basic recipe for kale with garlic and bacon. Or try Emeril Lagasse’s sauteed kale with Irish bacon. Or perhaps even abraised kale with bacon. It’s time to heal a hungry nation.
Is there still a worldwide kale crisis? If so, thanks a whole lot green states!

Happily. Apparently adding pumpkin to kale is a thing.
Here's how I make my bacon and kale croquettes:
1) Cook bacon in the oven. I generally use the Trader Joe's uncured bacon. While it's cooking, I dice a pasilla pepper and saute the pieces in a skillet with a little olive oil and some salt.
2) Drain the bacon grease into a mixing bowl. Add one package each of frozen kale and frozen spinach (again, from Trader Joe's). I usually let the packages thaw first and squeeze out extra moisture before adding. Add the pasilla pepper. Chop up some green onions and add the pieces in as well.
3) In a separate bowl, beat three eggs. Mix the eggs into the mixing bowl.
4) Add shredded cheese (the best is to shred your own Kerrygold Dubliner cheese, but pre-shredded will do) and mix thoroughly.
5) In a measuring cup, mix together 3/4 C almond meal or flour with 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp baking powder. Mix into the mixing bowl.
6) Fill a muffin tin with the mixture. Top with more shredded cheese. Bake at 300 degrees until the cheese starts to brown.
