Chicken Breasts in Foil with Tomatoes, Olives, and Parmesan Recipe

Sort of strange looking recipe, but apparently it works.

The recipe cooks up way way way yummier than it looks on the page! It's also surprisingly quick, easy, and healthy. The tomato on the bottom -- I used a canned San Marzano cut in half because winter -- caramelizes inside the foil, which also traps the juices so you don't end up with the dreaded dry chicken breast. Here is a photo of the recipe as a brown bag lunch over kale with roasted golden beets on the side:
