Baked Spaghetti Squash Carbonara

I've been looking for a good spaghetti squash recipe because it is one of the few vegetables I have been unable to find a delicious way to fix. When in doubt, add bacon and cheese!!!

Cool, nice to get your veggies in, and skip the grains ;) Lots of creative substitutes, just need to make the switch.
One thing that bugs me is why every spaghetti squash recipe says you should cut it in half first and bake it with water. You'll hurt your knives, take way longer scooping out the seeds, and end up with adding moisture to an already watery vegetable! I bake them whole and it could not be more easy peasy. Takes literally 2 minutes to cut them, scoop out the seeds, and shred the flesh after they're cooked.
Also, never cook just one spaghetti squash. It's a perfect vegetable for batch processing. The cooked flesh freezes surprisingly well, so just go ahead and throw two of them in the oven together and freeze one.
