Matzo ball soup is largely a matter of stylistic preferences and good stock. I like small "sinker" matzo balls and lots of chicken... so this recipe looks good to me!
Smaller matzo balls are usually chewier. Greater density.
Bigger matzo balls are usually fluffier. More air.
I dunno exactly what happened but the matzoh balls did not cohere whatsoever. Basically it turned into chicken soup with matzoh orzo on top :( My suspected culprit: did not crush up the matzohs finely enough. Will try again soon.
