The older I get, the more I enjoy trying different kinds of legumes. I've had these small green French lentils in fancy restaurants before, but now you can get them cheaply at supermarkets I wanted to see them at their most traditional best before I started experimenting.
Those lentils are beautiful.
Joyce I recently made up my mind to stock these green lentils as well. I understand that if you don't have the "de Puy" any green or brown lentils will be in the same ballpark.
For the most part lentils are lentils right?
Not really, red lentils fall apart more easily so they tend to be used in different recipes.
